Chicken and Pineapple Fried Rice

This rice was amazing! It tasted just like a yummy resturant dish! I had pineapple rice at a Thai resturant a while back and this recipe is me recreating it. I was so excteid that it turned out so good! Make this next time you are craving fried rice, you won't be disappointed!!

Ingredients:
1 1/2 cups white rice
3 cups water
3 beaten eggs
2 green onions, sliced
3 tablespoons sesame oil
1/4 cup soy sauce
1/2 cup diced carrots, diced and steamed or boiled for about 8 min.
1 small white onion, chopped
1 cup fresh pineapple, chopped into cubes
teriyaki chicken (I just marinated a couple chiken breasts in
teriyaki sauce and grilled it)

1. First you need to cook your rice hours in advance. I have found that it makes fried rice dishes SO much better if you use cooked and cooled rice. So, cook your rice a couple hours in advance.  Just bring 1 1/2 cups of rice and 3 cups of water to a boil. When it starts to boil, turn in to simmer and cook for 15 minutes with the lid on. After it is done cooking, spread it out into a 9x13 pan. Cover it and put it in the fridge until you are ready to assemble.
2. Alright, this comes together pretty fast so have all your ingredients ready to go! Heat a large pan to medium high heat and add your sesame oil. Toss in your carrots and onions. Let them cook for about 5 minutes to soften and get a bit of color. While the veggies cook, cook and scramble your eggs in a nonstick skillet. When they are cooked just set them off to the side....you will need them in just a minute.
3. After the veggies are soft and cooked add in your rice and soy sauce. Stir to combine and then add in your eggs, green onions, and pineapple. Toss it all together and taste for seasoning.
4. Dish up and top with cooked teriyaki chicken. Serve along side steamed broccoli.

Red Beans and Rice with Turkey Sausage

This is comfort food. Yum. This meal is sooo quick to put together. Seriously, incredibly fast. In the time it takes to make this meal you can bake up some muffins and toss a salad or steam veggies and walla......dinner is ready! This is a great fall meal to warm cold bellies.



Ingredients:

1 box (8oz) dirty rice mix
2 1/2 cups water
2-3 turkey sausage links (the spicy kind are great!)
1 can kidney beans, drained and rinsed
1 large green onion, sliced

1. Get those sausages cooking. In a non-stick skillet, cook your sausages until cooked through. They can be cooking while you get your rice ready, which is next.
2. Ok, super easy here. In a 2 quart sauce pan heat rice and sauce mix and water until boiling. Reduce the heat to medium low. Cover and cook about 25 minutes. Stir every once and a while so rice isn't sticking to the bottom of your pan. Whenever your sausages are done cooking you can slice them up and add them in to the simmering rice to all the flavors blend.
3. When rice is tender go ahead and add your beans. Stir them in and cook about 1 minute until warmed through. Take your pan off the heat and let stand about 5 minutes. Fluff the rice and give everyone a nice big spoonful. Garnish with green onion.

* Corn bread or muffins would be great. A green salad or steamed green beans, broccoli, or roasted asparagus are all good veggies to have with this meal.

Rice Bowls

WE LOVE these rice bowls for dinner! Super easy and really healthy too! This is a light meal with lots of flavor and everyone will enjoy!



Ingredients:

1 can black beans, rinsed and drained
1 can sweet corn, rinsed
tomatoes, chopped
instant brown or white rice (make the appropriate serving size for your family)
chopped avocado
chopped olives
grated cheese
this dressing



1. Ok, this is really easy.....seriously. First, cook your rice. I always cook mine in chicken stock or throw in a couple bouillon cubes for a bit more flavor. This takes about 10 minutes to cook. Prepare all your fixings while your rice cooks!
2. You have to make the creamy cilantro dressing....this is why these bowls are sooo good!! So make that too while the rice is cooking.



3. Ok, time to make the rice bowls!! Start with rice on the bottom. Next I put the cheese (so it melts a bit) and then beans, corn, tomatoes, avocados, olives. Pour that yummy dressing on top, and dig in!

* You could add in grilled chicken or taco seasoned ground turkey, that would be good!
* Serve these bowls with warm tortillas and watermelon! Yum!

Creamy Wild Rice and Turkey Dinner

6 ingredients, 180 calories per serving, 8 grams of fat, and my whole family will eat it.... ah YES please! So so good, kinda like a pre Thanksgiving dinner, but much faster! Try this you will love it!! Perfect fall dinner!

( my pictures haven't been turning out as good because all the lovely sunlight is gone by dinner and I have to use my house lighting... sorry!)

Ingredients:

2 cups cut up cooked turkey or chicken

2 1/4 cups boiling water

1/3 cup fat free milk

4 medium green onions, sliced (1/4 cup)

1/3 cup craisins

1 can 98% fat free cream of mushroom soup

1 package (6oz.) long grain and wild rice mix (at any grocery store)

1. Heat oven to 350. In an ungreased 2 quart casserole dish mix all ingredients, including seasoning packet from rice mix.

2. Cover casserole. Bake 45-50 minutes or until rice is tender. ( About every 15 minutes I give it a stir) Uncover and bake 10-15 minutes longer or until liquid is absorbed. If you want you can sprinkle it with more green onions. That is it!! Yep, now serve roasted or baked sweet potatoes and biscuits on the side and you have a yummy fall dinner! Enjoy!

Southwestern Rice

I got this recipe from my mother-in-law and it is a great one to take to a bbq or just as a side dish. We have it for dinner and make it a full meal by dishing it up into bowls and adding grilled chicken and avocado on top!



Ingredients:

1 cup uncooked instant rice

1 can black beans rinsed and drained

1 can corn, drained

1 (1oz) packet ranch salad dressing and seasoning mix

3/4 cup diced Monterrey jack cheese ( I used shredded because that is what I had)

1/2 cup seeded, diced tomatoes

1/4 cup sliced green onions

handful chopped cilantro



1. Cook rice according to package. During last 5 minutes of cooking quickly uncover and add beans and corn. Cover immediately.

2. When rice is done, remove from heat and add seasoning mix and stir. Let stand 5 minutes then stir in cheese, tomato, onions and cilantro. Serve immediately.


* This is a very low-fat dish but for a little healthier you can use instant brown rice.... you can't even tell the difference!
