This dinner was a hit. Just yesterday at dinner, eating something completely different, my 5 year old daughter asked me when were were going to have breakfast pockets again. When she asks questions like that, I know I have done something right!
These are a really easy weeknight meal or a fun Saturday breakfast. I love that all the yumminess is on the inside so even little hands can hold these. Nice and warm from the oven, you have to try these!
Ingredients:
3 cups Heart Healthy Bisquick
1 cup fat free/low fat milk
6 eggs, beaten, scrambled and cooked
salt and pepper (for eggs)
1/2 lb. turkey sausage, crumbled and cooked
grated cheese, mozzarella, cheddar, or pepper jack
1. This is nice and easy. First, mix up your bisquick and milk. Once it has formed a dough, plop it onto a floured counter and roll out into a nice big rectangle. Make sure your surface is good and floured because you don't want these sticking when you are trying to assemble them. You want your dough to be fairly thin. If not when they cook up you will have a TON of biscuit and not enough filling. They puff up :)
2. Next, you are going to cut your dough into smaller rectangles. About 4x6 inches. You should be able to make 8-9 pockets. Now you are going to fill them. Add a bit of cheese, sausage, and egg right to the middle of your rectangle. You are now going to bring up all the edges and sides and pinch them in the center. Keep your fingers floured so you don't have a sticky mess, too. Flip it over and place it on a greased cookie sheet. It is ok if they don't look beautiful, they will once they are cooked.
3. Assemble the rest of your pockets and put them in a 450 degree oven for about 10-12 minutes, until the tops are golden brown.
4. My family loves dipping them in ketchup but they are great on their own. Add a fruit salad and smoothies and you have dinner.... or breakfast!
* it would be great to make a batch and keep them wrapped in the freezer for a quick breakfast too!

Moons over my Hammy (100th post!) and a Giveaway!!
Wow!! Next week is my first blogiversary! Yeah,this has been so much fun and such a great challenge for me. I love to cook so this is a great excuse for me to make lots of yummy food! In honor of 1 year of cooking I am going to give stuff away! I put together some fun kitchen stuff and if you want to win it, all you have to do is comment and tell me your favorite recipe on this blog. Then on March 21st I will announce the winner!

Ok, what we have here is: the best and most fun of all cupcake cook books! I love it and have used it a bunch! Perfect for parties.... believe me everyone wants this! Next, a citrus peeler, a Y peeler (love it), cute measuring cups, and a magnetic notepad for the fridge. I will throw in some yummy chocolate too! Fun, right?
Well today is my 100th recipe and post! I can't believe it. This came from my amazing sister and it was so good and easy! Yep, we like easy and quick. This will remind you of eating breakfast, lunch, or dinner at a yummy diner.

Ingredients: (this made 2 adult sammies)
loaf of sourdough bread
6 eggs (more for more sammies)
4 slices Swiss cheese
4 slices American cheese
sliced ham (lunch meat or deli meat)
1. First, you are going to make plain omelets for the egg part of the sammy. I use one egg, and two whites for each omelet and a little salt and pepper. You can add spices if you want, but really good this way. Set those aside.
2. Next, heat your skillet to medium heat and spray 2 pieces of sourdough with spray butter. We are going to do some layering. Ok, on the skillet: bread, then put 2 slices of Swiss cheese on one side, next egg omelet, 2-3 slices of ham, 2 slices of American cheese and then top with the other piece of bread. Basically it is a glorified grilled cheese. It is truly glorious.
3. Cook until golden brown, flip, cook and then enjoy! Really that is all there is to it. Add some homemade fries or potato wedges and applesauce and dinner is served!

Mini Stuffed Frittats
Yum! I love breakfast for dinner and this cooked up in no time. This is a light and healthy dinner that my husband loved too!! The girls liked the bit size dinner as well! It looks fancy, but is super easy.

Ingredients:
(This recipe made 24 mini muffin sized egg frittats)
1/2 lb. turkey breakfast sausage, cooked, crumbled and cooled.
5 eggs whites and 1 whole egg, beat together
1 tomato, seeded and diced
1/3 cup grated mozzarella cheese (or whatever cheese you like)
3-4 tablespoons chopped fresh cilantro
a splash of low fat milk or fat free half and half (for added fluffiness)
salt and pepper
1. Beat your eggs together in a medium size bowl. Add in your cooled sausage, tomatoes, cheese and cilantro, milk and salt and pepper.
2. Grease your mini muffin tins with non-stick spray. Fill each well almost full of egg mixture.
3. Put into a pre-heated 375 oven for 9-11 minutes, until eggs are set.
That's it!! Serve with muffins, apple slices, toast, fruit salad, baked potato wedges, smoothies, hash browns....anything breakfast and you are all set!!
* Because the eggs are mostly whites they are super good for you, lots of protein. And by adding one yoke, no one will ever know.... :)

Breakfast Pizza Sammies
I made this up one morning when I wanted to make Rex a nice hot breakfast. We had loads of pizza toppings left over from pizza the night before so I whipped up an egg and came up with this! Add some potato wedges/hash browns, and fruit, and breakfast or dinner is served! Quick, healthy, and warm in your belly!

(this made one, but you can make as many as you want!)
Ingredients:
Slice(s) of bread
Pizza sauce or pasta sauce
shredded mozzarella cheese
pizza fixings: pepperoni, Canadian bacon, sausage,
veggies, olives... whatever is in the fridge!
Egg(s)
parsley to taste
1. Push your toast down in the toaster and prepare the rest while it is toasting! Cook your egg anyway you like it, scrabbled or over easy.
2. When your toast it done, spread a spoonful of sauce on your bread. Next, sprinkle it with cheese. Top with warmed meats and veggies. ( I just popped my leftovers in the microwave for 10 seconds). Carefully place your egg on top . Sprinkle with chopped parsley and dig in!
* We love breakfast for dinner, so this is going to become a regular around here!
