Pizza Puffs

I found this recipe on another blog (Lick the Bowl Good)who got it from Rachel Ray and thought they looked great! Ok, they were better than great and I should have doubled it because I made it for 6 hungry adults and they lasted about 2 minutes! So good and a perfect party or summer food. Please try this, you will be a fan!



Ingredients:
3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon Italian seasoning
pinch of salt (my addition, optional)
3/4 cup fat free milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cut up turkey pepperoni
store-bought pizza sauce

1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.

2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

Easy right!! If you have left overs, pop them in the freezer and they are a great snack anytime!

Garlic Chicken and Articoke Pizza

About 2 years ago we went to visit my sister in-law in Redmond and we had the most amazing pizza!! It was sooo good, but you know how you can just tell by looking at it you are about to gain 3 lbs? Well, I have recreated it in a much lighter and healthier version, without sacrificing the delicious flavors!



Ingredients:

Pizza crust (I use this one or you can use your own or a refrigerated crust)
1 package McCormick Alfredo sauce mix
1/2 cup fat free milk
1 tablespoon tub butter (I use Brummel and brown butter, it is made with yogurt)
1 can artichoke hearts(in water)
2 chicken breasts, thawed
garlic powder
mozzarella cheese
olives
salt and pepper

1. Season your chicken with salt, pepper, and garlic powder. You want to have garlicy (is that a word?) chicken. It just really makes this pizza great! Cook your chicken over medium heat until done. Set aside.
2. Time to make your sauce. Take your package of Alfredo mix and whisk it into milk over med/high heat. Add butter. Add a about 1/4 teaspoon garlic powder too:) You want it to be nice and thick. After it has all come together, let it cook for just a minute or two over the heat then take off and let cool. It will become thicker as it cools.
3.Drain your artichokes and chop into bite size. Slice your olives too, it you want them. Shred your cooled chicken and grate your cheese.
4. Lets assemble! Ok, on your ready crust (some crusts want you to cook for a few minuets before topping so make sure you are at that step) spoon your sauce and spread around to edges. Next top with artichokes, chicken and olives. Last sprinkle your cheese on top. Sprinkle top of pizza with bit of dried oregano.
5. Bake for 10-12 minutes in a 425 oven. It is so good you won't be able to believe it until you taste this pizza!! Add a side salad and dinner is served!

Taco Pizza

We love us some yummy pizza around here, so I am always trying to think of new ways to make it. This week I came up with this! SO GOOD!! Combine Mexican and Italian and poof, delicious!!!



Crust
I use this one, but you can use any thing you like!

Toppings:

1/2 lb. cooked ground turkey, seasoned with taco seasoning
red taco sauce
shredded mozzarella cheese
chopped tomatoes
shredded lettuce
olives
(any other taco toppings you like)

1. After you make your crust or prepare it bake it at 425 for about 7-8 minutes to prep it. Next, spread red taco sauce on it and cover in meat and then cheese. Bake at 425 again for about 10 minutes or until cheese is melted and crust is golden brown.
2. Top with lettuce, tomatoes, and olives and cut into slices. So GOOD and so easy!!

Pizza Rolls

I came up with this idea so that we could have bite size snacks in the fridge or freezer. Pizza is a favorite around here so I put the two together. They were a hit! We all loved them and even Annie asked for more!

Ingredients:

Store bought pizza dough or click here for homemade

pizza sauce

cheese
favorite toppings: veggies, pepperoni, pineapple,
canadian bacon, grilled chicken .... the possibilities are endless!

1. Roll you dough into a circle. Using pizza cutter, cut into wedges. The skinner the wedge the smaller the pizza bit will be.

2. Carefully spread sauce over entire wedge. The top with cheese and toppings.

3. Starting at the widest end carefully start rolling your dough. Place on a cookie sheet. If you want you can brush on melted butter to make them golden brown. Bake at 375 degrees for 10-15 minutes. The bigger the rolls the longer they will need to bake! Use left over sauce for dipping! Enjoy!

pizza dough

This is the best and easiest pizza dough recipe. I always make homemade dough because it takes no time and very little effort. It makes enough for two regular size round crusts, eight mini pizzas and/or one large round or rectangular crust. It just depends on how thick you want it so you can play around with it!. I always make the dough and split it into half. I use one half for a medium thin crust and then put the other half into a zip lock bag and put it into the freezer. Then when ever I want to make a crust, bread sticks, or calzones i just take it out of the freezer a few hours before dinner to thaw, and presto.... you're ready!
Ingredients:
2-3/4 to 3-1/4 cups flour
1 pkg. active dry yeast (2 1/4 teaspoons)
1/2 teaspoon salt
1 cup warm water
2 tablespoons cooking oil or olive oil
1. In a large mixing bowl combine 1-1/4 cups of the flour, the yeast, and salt; add warm water and oil. Beat with an electric mixer on low speed for 30 seconds scraping bowl constantly. Beat on high for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.
2. Turn dough out on a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. ( about 6 minutes)
3. Divide (if you want) and cover left out dough and let rest for 10 minutes. Roll out and add toppings. Bake at 425 for 12 minutes or until done.
This is what your ball of dough should look like after you have finished kneading it. Now would be the time to put half in the freezer if you wanted to save half. Roll it out and top with sauce, cheese and all your favorites!!

Yummy! Rex loves homemade pizza and asks for it often, so we always make our favorite... BBQ chicken and pineapple. It turns out great every single time!

* one time I didn't add the oil and it turned out perfect, so that is how I make it everytime! Fat free crust!
